Best Chocolate Cookies Ever

450 g 70% chocolate

60g unsalted butter

4 eggs room temperature

349g dark brown sugar

1tsp vanilla

100g rye flour

1tsp baking powder

0.5 tsp salt

Melt butter and chocolate together in a double boiler til silky smooth and set aside to cool a bit. Whisk the eggs together, adding the sugar gradually until dissolved then whisk at high speed for 5 minutes until at least doubled in size and lightened in colour. Stir in vanilla, flour and chocolate mixture and well combined.Refrigerate for at least half an hour. Form into sausage shape on plastic wrap and store in fridge or freezer until ready to be baked off.

Slice off into discs and top with crystal salt leaving room for spreading. Bake at 180 degrees for 10 minutes. Top with another sprinkle of salt upon taking from the oven and let cool on tray.
